- 2 bay leaves
- 6 peppercorns

- Water: enough to cover bones by 1–2 inches
Directions
- Fill a 6-quart slow cooker with all ingredients.
- Cook on LOW for 18–24 hours.
- Strain, cool, and store.
- Refrigerate up to 5 days or freeze up to 3 months.
- Keep the sautéed vegetables and eat them plain or in the broth.
Pressure-Cooker / Instant Pot
- Load all ingredients, using the same quantities, into the pot.
- Seal and set to High Pressure for 2–3 hours.
- Allow a natural release for 30 minutes.
- Strain and package.
